This Street Corn 'Elote' Jar Salad is the ultimate meal prep solution. It’s colorful, flavorful, and packed with nutrients. Plus, you can make it ahead for lunch, dinner, or even a picnic treat!

Ingredients

  • 6 Tbsp. Salsa
  • 1 Diced Zucchini
  • 12 Oz. Fire Roasted Frozen Corn, Thawed
  • 1 Diced Bell Pepper
  • 1 Diced Jalapeno
  • 10 Oz. Dry Broccoli Slaw Mix
  • 4 Oz. Baby Greens (Romaine or Kale)
  • 2 Oz. Queso Fresco
  • 1 Lime, Cut into Wedges

Instructions

  1. Layer in order dividing evenly between meal prep sealable containers. 6 Tbsp. Salsa, 1 Diced Zucchini, 12 Oz. Cooked Fire Roasted Frozen Corn, 1 Diced Bell Pepper, 1 Diced Jalapeno, 10 Oz. Dry Broccoli Slaw Mix, 4 Oz. Baby Greens, 2 Oz. Queso Fresco, and 1 Lime, Cut into Wedges.
  2. Cover and set in the fridge to enjoy for 3-5 days.
  3. When ready to enjoy, remove from the fridge and give it a good shake!
